
Umami Burger Opens Soon! I know Umami Burger at Fred Segal in Santa Monica is expected to open any time now, but I’m nursing an addiction and couldn’t wait to find out what was unique to this location. Aside from literally pressing my nose to the glass, I tracked down Umami Burger’s Adam Fleischman who said to expect a more diverse menu and some exclusive, yet reasonable wines. Bottles will be under $35 and glasses under $10, with salads and organic options folded into the menu.
I’ll admit I was an Umami Burger late adopter and ended up there by mistake when I went to the Space 15 Twenty location expecting its predecessor, Snackbar. Not in burger mode, I took off with some cheese tater tots and was pretty blown away by the rich flavor. I made a point to try a famous burger a month later (shots below) and am now hooked. The term Umami refers to a Japanese philosophy that aside from the four standard tastes we experience (sweet, sour, salt, bitter), the actual chemical reaction that creates a savory experience is considered the fifth element.

My first Umami dining experience is evidenced below.
Diablo Burger – The delicious burger has a mild hot sauce, light bleu cheese and a few fried onion strings. The burgers are served medium rare, unless otherwise requested.

Cheese Tater Tots – These aren’t always on the menu, but when I don’t see them, I ask and they sometimes have a batch cooked. If you get the tempura onion rings, try them with the roasted garlic aioli sauce.

Paper Placemats – For reasons I can’t understand, I’m hypnotized by their hand-stamped placemats. When I was a kid, stamping was a big thing I did with my sister and my Dad, so it’s a small, personalized detail I can still appreciate. Even better, the Santa Monica placemats will be red ink (which would resemble a certain celebrity’s mouth, don’t you think)?
